Before the Americas ruled rum, three cultures had already made its ancestor. Filipino palm wine traditions, Chinese distillation techniques, Dutch trade networks. All gathered in Java, where distillers fermented cane and red rice with ragi, a wild-yeast cake older than European brewing. We brought it back, but this time reflecting the oak traditions of the category's modern capital.
